A cooking spray is a great substitute for the parchment in baking and was originally used to bake cookies, prior to parchment’s coming into extensive use. Another efficient substitute for parchment is silicone mats. These materials are safe to use at extremely high temperatures in an oven. In fact, they are better than parchment in terms of withstanding heat. Another advantage of silicone mats is that they can be used a couple of times. However, these materials are typically expensive.
Many people replace parchment with wax paper but in wrong applications. The latter should not be utilized for baking purposes since it is not capable of withstanding high temperatures. Since the wax paper has an extremely low melting point, the wax it contains combines with food easily. In addition, it burns and smokes so fast. The paper is not also equal to parchment when it comes to nonstick properties.
It can only be used as a substitute where parchment is used for wrapping food. Also, wax paper can be used for covering kitchen surfaces while decorating a cake to avoid a messy job. Regular paper, grocery bags and aluminum foil are also commonly substituted for the parchment paper.
